The pandemic has prevented us from doing so many of the things we love.  But it has also given us a chance to return to our kitchens, and unleashed a new wave of interest in home cooking!  Join Rabbi Brown as we get ready for summer's arrival by adding two desserts to our home cooking repertoire.

Summer Berry Clafouti, by Julia Moskin (Inspired by Julia Child)

Don't let the French scare you!  This is a souped up pancake with fresh fruit!

Makes 6-8 servings

Butter for pan
1 and 1/4 cups whole or 2 percent milk
⅔ cup granulated sugar, divided
3 eggs
1 tablespoon vanilla extract
⅛ teaspoon salt
1 cup flour
1 pint (2 generous cups) blackberries or blueberries, rinsed and well drained
Powdered sugar in a shaker

1) Heat oven to 350 degrees. Lightly butter a medium-size flameproof baking dish at least 1 1/2 inches deep.
2) Place the milk, 1/3 cup granulated sugar, eggs, vanilla, salt and flour in a blender. Blend at top speed until smooth and frothy, about 1 minute.
3) Pour a 1/4-inch layer of batter in the baking dish. Turn on a stove burner to low and set dish on top for a minute or two, until a film of batter has set in the bottom of the dish. Remove from heat.
4) Spread berries over the batter and sprinkle on the remaining 1/3 cup granulated sugar. Pour on the rest of the batter and smooth with the back of a spoon. Place in the center of the oven and bake about 50 minutes, until top is puffed and browned and a tester plunged into its center comes out clean.
5) Sprinkle with powdered sugar just before serving. (Clafoutis need not be served hot, but should still be warm. It will sink slightly as it cools.)

Red, White, and Blue Milkshakes by Lorie Yarro

Makes 4 servings

12 scoops vanilla ice cream
6 splashes of milk
1.33 c blueberries
10-14 strawberries
whipped cream, optional

1) In a blender combine blueberries, 4 scoops of ice cream and 2 splashes of milk. Blend until smooth. Add more milk if too thick. Pour into 4 separate milkshake-worthy glasses. Freeze for about 10 minutes.
2) Add 4 scoops of vanilla and 2 splashes of milk to blender and blend until smooth. Adjust milk if needed and then pour evenly on top of blueberry layer. Freeze for 10 minutes.
3) Combine 4 scoops of ice cream and 2 splashes of milk along with strawberries to blender and blend until smooth. Pour on top of vanilla layer. Add whipped topping to garnish, admire your beautiful work and then get to sipping!

Strawberry Fool by Mark Bittman

Fool is a British dessert: a fruit-infused whipped cream.

1 pint strawberries
½ cup sugar, or to taste
1 cup heavy cream
1 teaspoon vanilla extract, optional

1) Hull strawberries, then wash them and chop into 1/4-inch-thick pieces. Toss with half the sugar, and wait 10 minutes, stirring occasionally, until they give up their juices.

2) Place half the strawberries and all the juice in a blender, and puree. Pour puree back in bowl with chopped strawberries. (If you prefer your whipped cream to be smoother, feel free to puree all of the strawberries at once.)

3) Whip the cream with remaining sugar and vanilla until cream is stiff and holds peaks easily. Fold berries (or: berry puree) and cream together, and serve immediately, or refrigerate for up to two hours.
